How to Make Coconut Panna Cotta

Dairy Free, Vegan, Sugar Free

5 Ingredients and sure to impress. Use this recipe next time you want the wow factor without the work.

2 cup full-fat canned coconut milk
1 teaspoon agar agar powder ( Buy agar agar here )
2 tablespoon honey (or maple syrup)
1/2 teaspoon vanilla extract (or 1 vanilla bean, sliced down the middle)
1/4 teaspoon sea salt

Heat all of the ingredients in a medium saucepan over low-medium heat until the agar agar is dissolved and the mixture has bubbles around the edge (simmer). Simmer an additional 1 min, stirring constantly with a spatula.

Pour into 4 greased vessel(s) of choice (coconut oil works best here)

Refrigerate until set, approximately an hour and a half.

Serve with fresh fruit, chocolate sauce or lemon curd (recipe follows)

Vegan Lemon Curd

Zest and juice of 1 large lemon
4 tbsp corn starch
1 cup almond milk
4 tablespoons of honey (or maple syrup)
(Optional) yellow food coloring

Mix all ingredients, until smooth (I do mine in a blender to ensure no lumps).

Heat in saucepan to boiling, stirring constantly with a whisk. Remove from heat and stir with a whisk until more translucent, thick and smooth.

If lumps happen, don’t worry, just put back in the blender!
